Make: Mac & Cheese

Never been the one who likes cooking and I'm not a foodie either. I do have the occasional craving for the Japanese food now and then but I can easily dismiss the thought and just go on with life. Thankfully husband isn’t a foodie either so he didnt mind so much what's on the table. Yeah, lucky girl. But of course I can cook. Just the simple ones that dont take too much time. I dont like the heat and it'd be just too much if I requested for an aircond in the kitchen, would it?

I made Mac & Cheese last night at Mom's place. Not from those boxed-up Mac & Cheese though and it's good (I'm the champion of masuk bakul angkat sendiri btw). Mom wants me to post it up here so she can replicate it later for whenever I got too lazy to do it again. Which is something that can be expected from me. But to my defence, whatever mom made is way better. So why bother. Right? Right.

So here are things you'll need, mama.

1. Macs (For macaronis. I use short forms because I'm cool that way). I used half box
2. Fresh Mozzarellas or packed. Any way will do.
3. Cheddar. Any form that you'll find the fridge.
4. The Cheese Mix.
5. Ground black pepper
5. Sliced Button Mushroom (I used the tinned mushrooms)
6. Franks or frankfurter you might call it while we called it as Hotdog. (Thin slices)

No measurements. I just dumped everything in and expect for the best.

So here is it. Let’s start off with the macs. Pre-boiled it at exactly 15 minutes. We don’t want to over-cook it. Then strain it. Put aside.

Excuse the ugly pictures. You can't expect me to post pretty hi-res pictures while my camera is in your custody, ma.

Ok. Sambung.
Boil some franks and button mushrooms. I'm lazy, so I boil everything together with the macs. Then slice the franks into thin pieces using the veggie slicer making it look like beef bacons slices. Same thing with the mushrooms but I just use knife. Slice 'em thinly. Best effect is to sauté both mushrooms and franks before mixing them with the macs. But I dont do that and you know why. Mix with macs and add a tasteful of ground black pepper. Mix well.

The cheese. The trick is to use 3 different cheeses. One that binds the macaronis together that gives the gooey and stringy effect to the dish. Fresh Mozzarellas is the best bet for this. Another would give a bitter and milky taste of the cheese. So I added Cheddar to the mix because it is easily available at home. We always have Cheddar. The last one is a little tricky but man, this taste sooo good. It is actually a cheese powder that will be mixed with water. I didn’t know what it is called, but it's the same one used by KFC for their famous Cheesy Wedges. Ok, I'm not helping and I don’t have the picture for that mix but Mom do and I bet Mom will post it soon. When she does, I'll be sure to link it here. Mix all together and nuke (microwave) them for 1- 2 minute. Stir. Add them into the mixed up macs.

No salt because the cheese mix is already salty.

Pre heat the oven to 250C before baking then bake for 10-15 minutes or until your top layer turns golden brown and then, done. Tadaaaaaa!

Estimation time it took : 35 minutes.

So eat up, then sleep. The perfect twinning program so far.

Queen Bee never like that idea of me choosing sleep over food because she likes cooking and she like what she's cooking. We all do. Even down to her simplest Sup Sayur tastes gooooood. Hence the Royal Queen is in the midst of cooking up a storm for this space. She's been taking an awful load of pictures of good food that she cooked and managed to transfer the ownership of my Canon S90 camera to her permanently. One of the many fights I had lost to her. So here I am, updating so this space won’t go stale. I hope she starts blogging soon and take over this space permanently. I know she has big plan for this blog.

So mama, cepat update!

Loads of love.

Re-posted: A celebration of lights and colors

I'm re-posting this that was once posted back on Deepavali 2008 just because, oh well.. I designed it for Mama's cafe and I like reminiscing on good stuff. No, not Mama's cafe (that's a good memory though, but it's not mine to claim). I'm talking about the design. Duh!

Anyway...

Happy Deepavali to all our Hindu friends out there.
May this celebration brings more joy and better understanding of love toward every aspect in our lives.

With million of hugs and joyous good foods.

Counting back to 0

We're restarting.
Well, at least mom is and she wanted me to set this blog up again for her. The idea was not to create a whole new blog, but to maintain the one she has. That way, for whatever reason, plan or big story that she has in her mind, will make sense.

So here I am, requested by the Queen Bee herself, as a part-time contributor. Because she thinks I'm cool. Arent all mothers awesome? They think highly of their children and she, my awesome mother, isnt afraid that I'll mess this plan of hers up. But dont worry. I wont mess this up for you, ma'am. Janji, tak tipu.

I do have my own personal space at wordpress which I mainly write about my passion with colors and some other things that arent really related. But I am not one for constant updates. So dont hold your breath, ok? I dont want to be accounted for later. hmm.... what else? Background image is by yours truly.

I personally think that my writing can be snarky with a pinch of cockyness at times, a little wise-ass-y and downright random most of the time. Will try not to but if I do, just play along, alright? I meant well.

So now, big cheers for Mama's new begining! We love her (yes, we do.) so we're celebrating this in a way to show our love for her and her fantabulous, over the moon cooking. (There you go. A hint of her big plan for this blog)

With loads of love.

Feast for the eye

Just had our food testing and photography session at our cafe in Kelana Mall. We had it as for our new promotion and at the same time, perfecting the taste of our Chinese/Malay spreads by our resident chef for the new place. Pictures were taken with my daughter's Lumix digital camera and attended only by my small family because so far, they have been my toughest critics. Nothing fancy though.

How the cafe got its name?

When the idea of having our own cafe was mooted with my partner, many names were proposed. Being an eatery establishment, words that conjure the meaning of food kept coming up such as Limau Kasturi, Sri Lawang, Bawang Putih etc. etc. We feel such name were too common and does not align to the bigger vision (well let it be our secret for the moment) of the cafe business which we have in mind. The name was created by my husband from the two partners' nick name i.e Ana (which is mine) and Ani (belongs to my partner) by adding the letter S infront of our nick. Everybody seems happy without much deliberation.

However, when the name of the cafe was mentioned to friends and strangers, many gave a non-believing look as the name has no indications or relationships whatsoever to food or an eatery establishment. Some are making fun and feel the name is unsuitable, while there are some who said the name is catchy and commercial. After one month of its establishment the name has become soothing to the ear as more and more people are calling ...from the pasar borang vegetable seller, the butcher, the fish monger, the egg supplier and off course the CUSTOMER.

A dear Sri Lankan friend of malay origin when asked to transalate the name of the Cafe, he has translated it as Here There and Everywhere. This has given us an idea of having Here, There and Everywhere as our tagline (yet to be agreed). My daughter would prefer it as Here There and Back Again which also could be another possible tagline for our cafe.

Even now RTM is using tag line Sana Sini Pilihanraya. Who is copying Who. Sana Sini has been the talk of town during this election and name Sana Sini Cafe would follow suit. Insyaallah.
